Description

A rich and delicious shakshuka with grilled sausage and eggs in a spicy tomato sauce. Perfect for suhoor or breakfast, served with toasted bread.

  1. Cut the sausage into small pieces.
  2. Heat the pan over high heat and cook the sausage until browned.
  3. Add chopped onion and green pepper, and stir until the onion softens.
  4. Season with cumin, coriander, salt, and pepper.
  5. Add butter to soften the mixture a bit.
  6. Add tomato juiced and a pinch of thyme, and let it boil and thicken.
  7. Crack the eggs one by one over the mixture, and season with salt and pepper.
  8. Cover the pan and let it cook until the eggs are set.
  9. Garnish with parsley and serve.
