Lentil Soup with Vermicelli

Instructions
Heat ghee and oil in a pot. Sauté the onion until translucent.
Add garlic and sauté until fragrant.
Stir in carrot, sweet potato, green bell pepper, tomato, and lentils.
Season with salt, black pepper, cumin, dried coriander, and turmeric.
Add water and bring to a boil. Cover and simmer until vegetables are tender.
In a separate pan, heat oil and toast vermicelli until golden then add ghee.
Add toasted vermicelli to the soup after blending it with hand blender and simmer until cooked through.
For the garnish, heat ghee in a small pan and sauté garlic and dried coriander then add it to the soup just before serving.
