Pasta with Caramelized Onion & Chili Oil Sauce

Begin by finely chopping the onions.

In a pan, heat a combination of butter and olive oil over low heat.

Add the chopped onions and cook them slowly, allowing them to caramelize for at least 30 minutes.

While the onions are caramelizing, cook the pasta in salted boiling water according to package instructions.

For the chili oil mix, mix some chili flakes with salt, sugar and oil (that was previously used to cook onion & garlic).

Once the onions are nicely caramelized, add a small amount of the chili oil mix along with garlic and stir well.

Add the cooking cream to the pan and stir everything together.

Optionally, sprinkle some Parmesan cheese.

Season with salt and Italian seasoning (parsley, thyme, basil, etc.).

Once the pasta is ready, add it to the sauce and mix gently so that the pasta is coated without overcrowding the pan.
