For the Chicken Drumsticks with Indian Seasoning

  1. In a deep bowl, add tomato paste, paprika, pepper, oregano, garlic powder, Himalayan salt, garam masala spices, lemon juice, minced garlic to the chicken drumsticks and mix well using your hands so the spices reach all the chicken.
  2. Store in a sealed plastic container. Can be frozen for up to a month.

For the Chicken Kofta

  1. Finely mince the chicken breasts and thighs. In a deep bowl add minced and well-drained onion, mixed spices, ground coriander, nutmeg, paprika, garlic powder, pepper, Himalayan salt, minced parsley, baking powder, and breadcrumbs to the minced chicken. Mix well using your hands.
  2. Shape into balls after wetting your hands with onion water. Store in a sealed plastic container. Can be frozen for up to a month.

For the Chicken Shawarma

  1. In a deep bowl, add yogurt, mustard, pepper, ground coriander, smoked paprika, garlic powder, chili powder, Himalayan salt, minced garlic, minced and well-drained onion, minced parsley, and sliced bell pepper to the thinly sliced chicken breasts. Mix together with your hands.
  2. Store in a sealed plastic container. Can be frozen for 1 to 2 weeks only.
