Chicken and Pomegranate Molasses Phyllo Cups

This innovative recipe presents phyllo in a new way, as small cups filled with a chicken and pomegranate molasses mixture. It features crispy phyllo and a richly flavored chicken filling, easy to serve and perfect for gatherings.

Cut the chicken breasts into small cubes.
In a pan, heat a little ghee or oil, then add the sliced onions and sauté until wilted.
Add the chicken and cook until done.
Season with salt, black pepper, sumac, mint, and spices. Add pomegranate molasses and stir. Let the filling cool.
Cut the phyllo dough into medium-sized squares. Brush each layer with melted ghee and stack them. Repeat until you get the desired thickness.
Place a suitable amount of chicken filling on each phyllo piece. Continue until all the filling is used.
In a bowl, whisk the egg with milk and black pepper. Add the yogurt, cumin, sumac, dried mint, and vinegar. Mix well.
Preheat the oven to 180°C (350°F). Bake for 20–25 minutes until the top is golden.
Remove the phyllo from the oven, pour the yogurt mixture over the top. Serve sprinkled with chopped parsley, roasted almonds, and a drizzle of pomegranate molasses.
