In a pressure cooker, add ghee and the duck cut into 4 pieces. Fry on both sides, then add salt, pepper, onion, carrot, bay leaves, cardamom, and mastic. Add boiling water and cover until fully cooked. Remove duck meat from bones and place in a Pyrex dish.

To make the sauce, add ghee or butter in a pan, add flour, and whisk until golden. Add duck broth, orange juice, whipping cream, salt, and pepper. Whisk and let simmer for 5 minutes.

Add the sauce over the duck meat until covered. Leave some sauce aside. Place the Pyrex dish in a preheated oven at 180 degrees and bake for 20-30 minutes.
