One Pot Rice with Chicken & Veggies

Ingredients

Instructions

  1. Marinate the chicken with salt, pepper, paprika, nutmeg & olive oil.
  2. In a pan, heat some olive oil then add the chicken and stir until colored then set aside.
  3. In the same pan, add butter then the veggies ( chopped bell pepper & onion, sliced mushroom, shredded carrot.
  4. Add sweetcorn and season with salt, pepper, paprika & nutmeg.
  5. Add rice and stir. Add butter and water.
  6. Cover the pan and cook on low heat. After 10 minutes, add the chicken.
  7. When cooked, add lemon zest and enjoy.
