Peel and slice the potatoes into thin slices using a mandolin (for even thickness). Soak the slices in a mixture of water, salt, vinegar, and lemon juice for 1 hour to soften them.

Roll each potato slice into a spiral. You can choose to make them as single-layer rolls or double-layer rolls for extra crunch.
