  1. Peel and slice the potatoes into thin slices using a mandolin (for even thickness). Soak the slices in a mixture of water, salt, vinegar, and lemon juice for 1 hour to soften them.
  2. Roll each potato slice into a spiral. You can choose to make them as single-layer rolls or double-layer rolls for extra crunch.
  3. Heat oil in a frying pan.
  4. Prepare the seasoning; salt, black pepper, paprika, cumin, dried coriander, and dried basil or oregano.
  5. Serve the crunchy potato rolls with ranch sauce on the side for dipping.
