In a pan, add ghee and lentils and mix well. Add minced garlic then season with onion powder, cumin, coriander, salt and pepper. Add vegetable stock then cover and let it cook for 30 minutes.

Meanwhile, add mint, fresh coriander, lemon juice, olive oil, salt & pepper to a food processor to form the dressing

In a bowl, add yogurt & lemon juice and stir them well together.

Once the lentils are cooked. Transfer to dish and serve topped with the yogurt mixture & the delicious herb salsa as a dressing.
