Stuffed Crust Pizza with 1/2 Tomato Sauce & 1/2 White Sauce

  1. In a bowl, mix warm water, dry yeast, and sugar. Let the mixture sit for 10 minutes until bubbles form, indicating the yeast is active.
  2. In a large mixing bowl or stand mixer, add flour and salt. Gradually pour in the yeast mixture while kneading. Add warm water slowly until the dough forms and becomes slightly sticky but manageable.
  3. Knead the dough for 8-10 minutes until smooth and elastic. Lightly coat it with olive oil, cover, and let it rise in a warm place for 1 hour until it doubles in size.
  4. After the dough has risen, sprinkle flour onto a clean surface. Punch the dough down and knead briefly to release air bubbles. Let it rest for another 30 minutes.
  5. To prepare the tomato sauce: In a saucepan, heat olive oil over medium heat. Add blended, strained tomatoes and season with salt, black pepper, and oregano. Simmer until the sauce thickens, then remove it from the heat and let it cool.
  6. To prepare the white sauce: In a separate pan, heat olive oil and sauté onions and garlic until golden. Add flour, stir for a minute, then pour in the milk. Whisk continuously until the mixture thickens into a creamy consistency. Season with herbs and adjust salt to taste.
  7. Preheat the oven to its highest temperature for 30 minutes before baking.
  8. On a floured surface, roll out the dough into a large circle. Place mozzarella cheese sticks around the edge of the dough. Fold the dough over the cheese sticks, pressing to seal the edges.
  9. Spread a thin layer of either the tomato or white sauce over the center of the dough. Add your preferred toppings and sprinkle with shredded mozzarella.
  10. Bake the pizza on the bottom rack of the oven for 5-10 minutes, checking frequently. Once the crust is cooked, turn off the bottom heat and turn on the grill (top heat) to brown the cheese evenly. Rotate the pizza for an even golden color.
  11. Remove from the oven and let the pizza cool slightly before slicing and serving.
