Description
Shorba Kawari' is one of the most famous traditional Egyptian dishes. It is characterized by its rich texture and deep flavor thanks to slow cooking with spices. It can be served hot as a main dish or with fatta and red sauce.

Instructions
Wash the trotters thoroughly with salt, flour, and lemon - this is the most important step.
In a pot, heat 2-3 tbsp of ghee or oil.
Add onion, garlic, carrots and sauté.
Add the trotters and brown on all sides, especially near the bone.
Add boiling water.
Cook in a pressure cooker for 1 to 1.25 hours, or on regular heat for 4 to 5 hours depending on desired tenderness.
Add a pinch of black pepper, bay leaf, and 2 additional cloves of garlic.
After it is cooked, strain the soup and serve.
