In an oven tray, add the slices mushrooms, sliced onion, fresh thyme, 1/2 garlic head. Season with Italian spices, salt & pepper and some olive oil.

Roast in the oven for 20 minutes

In a pan, add butter and the roasted veggies then the stock. Blend with hand blender then add cooking cream.
