  1. Prepare the yeast mixture by mixing sugar, milk & yeast. Mix well and set aside for 10 minutes.
  2. In a bowl, mix flour with sesame then add baking powder and kahk spices or ground mahleb.
  3. Add melted warm ghee and mix using hand until dough is sandy.
  4. Add the yeast mixture and knead again.
  5. Cover and let it rest for 30 minutes.
  6. Start shaping the biscuits. First by taking some dough and making a roll. Cut the edges to form a sharp shape then cut diagonally. (watch video for technique).
  7. Put the biscuits in an oven tray (line with parchment paper but that's optional).
  8. Let it rest for 1 hour then bake at 180 degrees until golden from the bottom then turn on broiler until golden from the top as well. This should take 12-15 minutes.
