In a pot, melt butter over medium heat.

Once the butter is melted, add flour and whisk them together until the flour is cooked,slowly pour in the milk, whisking constantly, until the mixture thickens to a smooth, creamy consistency.

Season the sauce with salt, black pepper, and paprika.

Stir to combine.

Add shredded red cheddar and yellow cheddar cheese to the sauce.

Whisk until the cheese is fully melted.

Grease a baking pan with butter.

Layer sliced potatoes in the baking pan and sprinkle a pinch of salt.

Pour the cheesy béchamel sauce over the potatoes, making sure to cover them evenly.

Cover the baking pan with foil and bake at 180°C (350°F) for 50 minutes.

After 30 minutes of baking, remove the foil so the top can brown and get golden.

Bake for the remaining 20 minutes, or until the potatoes are tender and the top is golden brown.
