Spice mix (used on 1,200 gm oxtail)

Instructions
Oxtail
Dust the oxtail with the spice mix
Sear in a bit of oil on all sides
Remove from pot and set aside
Add spices, onion and garlic. Stir everything together
Dissolve the stock in the water
Return the oxtail to the pot. Add the stock/water
Once boiling, reduce heat, cover and allow to cook for 2 1/2 hours
Pass the braising liquid through a sieve, and reserve
Pull the meat from the bones to prepare the Hawawshi and mix in with the braising liquid
Prepare the herb mix: Mix all ingredients in the food processor
Chop red onion and tomato (remove seeds)
Prepare Tahini: Add all ingredients to a blender, blend till smooth
Assemble: Baladi bread, cheddar cheese, oxtail mixed with vegetables & herb mix, toast in a pan or grill and serve it with tahini
