Instructions
Crumble the kunafa in a food processor. Melt the ghee and add the kunafa, stirring constantly until golden.
To prepare the pecan caramel: In a saucepan over medium heat, place the sugar and let it melt until it turns caramel in color. Add the butter and cooking cream and stir. Add a small pinch of salt and broken pecan pieces. Remove from heat.
To prepare the chocolate custard: In a saucepan, mix the custard powder with sugar and cold milk until dissolved. Add the hot milk and stir over medium heat until thickened.
To serve: Place a layer of toasted kunafa in a serving glass, then add a layer of chocolate custard, then a layer of caramel and pecans, and repeat the layers. Garnish with strawberries, berries, and fresh mint. Serve immediately to keep the kunafa crispy.
