In a mixing bowl, add the tahini.
Pour in about half of the water first.
Stir vigorously with a spoon or whisk. The tahini will initially thicken and become pasty.
Continue stirring until it starts to loosen and lighten in color.
Gradually add the remaining water, a little at a time, while continuously stirring. The consistency will vary depending on the tahini.
Keep stirring until you reach a smooth, light, and creamy consistency.
Once the desired creamy consistency is achieved and the color has lighted, add salt, cumin, and paprika (or chili powder).
Optionally, add a very small pinch of nutmeg. Stir everything well until the spices are fully incorporated.
Add the finely minced garlic cloves to the tahini mixture.
Pour in olive oil. Add white vinegar.
Stir vigorously one last time until all ingredients are perfectly combined and the sauce is smooth and creamy.
Serve immediately alongside sandwiches, grilled meats, falafel, or as a dip with fresh vegetables or bread.
