- In a mixing bowl, add the tahini.
- Pour in about half of the water first.
- Stir vigorously with a spoon or whisk. The tahini will initially thicken and become pasty.
- Continue stirring until it starts to loosen and lighten in color.
- Gradually add the remaining water, a little at a time, while continuously stirring. The consistency will vary depending on the tahini.
- Keep stirring until you reach a smooth, light, and creamy consistency.
- Once the desired creamy consistency is achieved and the color has lighted, add salt, cumin, and paprika (or chili powder).
- Optionally, add a very small pinch of nutmeg. Stir everything well until the spices are fully incorporated.
- Add the finely minced garlic cloves to the tahini mixture.
- Pour in olive oil. Add white vinegar.
- Stir vigorously one last time until all ingredients are perfectly combined and the sauce is smooth and creamy.
- Serve immediately alongside sandwiches, grilled meats, falafel, or as a dip with fresh vegetables or bread.
