Homemade Roast Beef

Instructions
Let the beef eye of round roast (3 kg) sit at room temperature for about an hour.
Heat a large pan or skillet over high heat with a little olive oil. Sear the roast for 2 minutes on each side until browned.
Remove the roast from the pan.
Prepare the marinade by mixing olive oil, minced garlic, fresh thyme, salt, and black pepper. Stir well.
Brush the marinade all over the roast until fully coated.
Place the roast on a baking sheet with a wire rack for even cooking. Put it in a preheated oven at 170°C (340°F).
Bake for about 1 hour until the internal temperature reaches 60°C (140°F) for medium-rare. For a darker color, you can let it reach 75°C (165°F).
Loosely cover the roast with aluminum foil and let it rest for 30 minutes.
After it cools, wrap the roast tightly in aluminum foil and refrigerate overnight to let it finish cooking and make slicing easier.
Slice the roast into very thin slices for sandwiches or salads. Any extra can be frozen after wrapping tightly.
