Creamy Tuscan Chicken Pasta

Description

A delicious and easy creamy pasta combining grilled chicken breasts with Italian spices, spinach, and sun-dried tomatoes in a rich creamy sauce. Served with grated Parmesan cheese.

  1. Pound the chicken breasts, then drizzle with a little oil.
  2. Season with Italian seasoning, paprika, salt, and pepper.
  3. Heat a pan over very high heat, then add a little oil and grill the chicken for three minutes on each side until golden. Set the chicken aside.
  4. In the same pan, add oil and butter. Sauté chopped onion and minced garlic cloves.
  5. Once the garlic is fragrant, add cream and chicken broth, and stir well.
  6. Add the same seasonings used for the chicken.
  7. Finally, add the chopped spinach and sun-dried tomatoes.
  8. Boil the pasta for only seven minutes. Reserve one cup of the pasta water.
  9. Add pasta water to the sauce, then add the boiled pasta.
  10. Let it cook for five minutes, stirring, until the pasta is done and the sauce thickens.
  11. Serve the pasta hot, topped with the grilled chicken breasts. Sprinkle Parmesan cheese on top. Enjoy!

Chef Note

Make sure to heat the pan well before grilling the chicken to get a golden color. You can replace spinach with arugula if desired.
