Grate a generous amount of carrots and finely chop the cabbage into thin slices.
Sprinkle sugar over the vegetables and drizzle vinegar on top.
Massage the sugar and vinegar into the vegetables until they are well-coated.
Add mayonnaise to the mixture and stir thoroughly to combine.
For a lighter version, replace the mayonnaise with yogurt and the sugar with honey.
Transfer the coleslaw to a container and refrigerate for at least 3-4 hours to let the flavors meld.
Serve cold as a side dish with your favorite meals.
