Wash and dry the chickpeas, then place them in a blender with the onion and blend on high speed.
Add garlic, parsley, cilantro, salt, black pepper, cumin, dried cilantro, and chili powder to the mixture and blend again.
Add flour and baking powder
Shape the dough as desired and place it in the freezer for an hour or in the refrigerator to firm up.
To prepare the sauce, mix yogurt with lemon, olive oil, harissa, salt, and black pepper.
Fry the falafel in hot oil over medium heat until golden brown.
Serve the falafel with yogurt sauce, arugula, tomatoes, and pickled onions.
