Grind the green bell pepper and onions in the blender. You can add hot pepper if you want it spicy.
Heat olive oil in a pan and sauté minced garlic.
Add chopped bell pepper and onion, sauté until softened.
Stir in the calamari rings and cook briefly.
Prepare the stuffing mixture with tomato juice, parsley, coriander, seafood seasoning, cumin, salt, and pepper.
Add a little hot water to the mixture and simmer briefly.
Transfer the mixture to a baking dish (Pyrex), cover with foil, and bake in a preheated oven for about 30 minutes.
Serve hot, optionally with rice or salad.
