Basmati Rice with Peas & Carrots

Description

An easy way to make fluffy basmati rice with vegetables. Sauté onion and garlic, then add frozen vegetables and spices, then add rice, water, and stock and cook until done. Serve alongside grilled dishes.

  1. In a large pot, heat a little oil and sauté one small chopped onion with two minced garlic cloves.
  2. Add the frozen peas and grated carrot and stir.
  3. Season with seven spices, cinnamon, and turmeric and stir briefly.
  4. Add the washed, unsoaked basmati rice and gently stir so it doesn't break.
  5. Add chicken stock cubes and 2 cups of water for each cup of rice, and adjust salt.
  6. When it boils, cover the pot and let it simmer on low heat for 30 minutes.
  7. After 30 minutes, uncover and fluff the rice with a fork, then turn off the heat, cover again, and let it rest for 10 minutes.
