Description

This is a recipe for grilled chicken with a rich and distinctive flavor, served with saffron basmati rice. The chicken is marinated with a mix of smoked spices and yogurt, making it tender and delicious. The rice is cooked with saffron and butter, served with yogurt and garlic sauce.   1. Mix all the marinade spices (salt, black pepper, smoked paprika, onion powder, dried coriander, turmeric) with the ground grilled bell pepper, coconut milk or yogurt, garlic, and sesame oil or vegetable oil.
  2. Coat the chicken well with the marinade, then place it in the refrigerator for at least two hours or overnight.
  3. Arrange the chicken on a rack in a baking tray and place it in a preheated oven at 100°C for about an hour until cooked and golden brown.
  4. Boil the basmati rice in salted boiling water for 10-12 minutes until cooked, then drain and return to the pot. Add the saffron and salt to taste, cover, and let it sit for 10 minutes.
  5. Fry the cashew nuts in a little oil with coriander and white pepper (optional).
  6. To serve, place the rice on a plate and garnish with cashew nuts and fresh coriander or parsley. Place the grilled chicken on the side. Prepare the yogurt with minced garlic and cumin to serve as a sauce.
