Baba Ganoush is one of the most popular Middle Eastern appetizers, characterized by the smoky flavor of roasted eggplant blended with tahini, garlic, and lemon. Served cold with Arabic bread or as a side dish.

Instructions
Wrap garlic head in parchment paper and foil.
Place the Eggplant, wrapped garlic, Tomato, and Onion in a tray with Olive Oil, Salt, and Pepper, and leave in the oven at 180°C for an hour, stirring occasionally.
Remove the vegetables from the oven, wrap the Eggplant in plastic wrap for 15 minutes to make peeling easier.
Peel the Eggplant and mash it well with Salt and coarse Pepper, then add 2 cloves of Garlic, 1 tsp Dried Coriander, 1 tsp Cumin, 1 tbsp Vinegar, 3 tbsp Tahini, a little Olive Oil, and the juice of a whole Lemon. Mix well.
Add the mashed Eggplant and the diced Tomato and Onion to the previous mixture and stir.
Place the mixture in a serving dish and garnish with pomegranate, parsley, Olive Oil, and pomegranate molasses.
