Description
Bechamel Pumpkin Casserole is a traditional and delicious Egyptian dessert. It is prepared by cutting and boiling pumpkin with sugar and vanilla, then mashing it with coconut and cinnamon. The bechamel is made from the syrup resulting from boiling the pumpkin with flour, butter, and milk, then poured over the pumpkin layer and baked until golden brown.

Place pumpkin in a pan, add sugar, and let it sit for half an hour until water releases.
Add vanilla to the pumpkin, then place it over low heat until cooked and water releases.
Strain the pumpkin from the syrup (liquid) and reserve the syrup aside.
Mash the pumpkin well with coconut and cinnamon.
To prepare the bechamel sauce: In a pot over heat, melt butter, then add flour and stir well.
Add the reserved syrup (from boiling pumpkin) to the flour and butter mixture, then add milk, cream, and condensed milk. Stir constantly until the consistency is thick and smooth.
In a suitable oven dish, place a layer of mashed pumpkin, then pour the bechamel sauce over it.
Bake in a preheated oven at 180°C until the top turns golden (about 20-30 minutes). You can turn on the broiler at the end to brown the top.
