Mexican Rice

Description

Recipe to prepare rice with vermicelli in a rich tomato and spice sauce. Serve the rice with yogurt, fresh tomatoes, and parsley.

Instructions

  1. Place the butter and oil in a pot over heat.
  2. Add the grated onion and stir until softened.
  3. Add tomato juice, tomato paste, and garlic.
  4. Season with salt, pepper, paprika, and chili powder (optional).
  5. Let the mixture thicken slightly over heat.
  6. Add the rice and water, bring to a boil over high heat, then reduce the heat to low.
  7. Let the rice cook until fully done.
  8. Add the chopped tomato, lemon juice, sweetcorn, red kidney beans and parsley over the rice.
  9. Serve the rice with a spoonful of sour cream.

Chef Note

You can use any type of rice, basmati or regular. Add fresh tomatoes and lemon juice after the rice is cooked. Serve with sour cream.
