Description

Kebab El Hala is a slow-cooked beef dish with carrots and sweet potatoes in a rich tomato sauce. It features deep flavors and melt-in-the-mouth tender meat.

  1. Melt the ghee with olive oil over high heat.
  2. Sear the beef cubes on all sides until golden, then remove.
  3. Add chopped onion and sauté in the fats and juices.
  4. Add spices (black pepper, dried coriander, cinnamon stick, bay leaves) and stir.
  5. Add carrots and sweet potato cut into small cubes.
  6. Add tomato paste and crushed tomatoes, stir.
  7. Add minced garlic and stir.
  8. Return the meat and its juices to the pot.
  9. Pour in beef broth to cover the ingredients. Bring to a boil, then cover, reduce heat, and cook for 30 minutes.
  10. Add chopped dates, cover again, and cook for at least an additional 90 minutes. Check for doneness every 30 minutes.
  11. Adjust salt to taste and add nutmeg.
  12. Serve with white rice or vermicelli rice.
