Creamy Zesty Lemon Chicken

Description

Juicy chicken cubes marinated with lemon, thyme, and mustard, then finished in a rich creamy lemon sauce with garlic and fresh dill. Light, fresh, and perfect for summer.

Instructions

  1. Season the chicken cubes with salt, black pepper, thyme, mustard, lemon juice, and olive oil.
  2. Heat a pan over medium-high heat and add a little olive oil.
  3. Add the chicken and a few lemon slices.
  4. Cook for 6–8 minutes maximum until just cooked through and still juicy.
  5. Remove the chicken from the pan.
  6. In the same pan, add butter, garlic, cream, sour cream/ greek yogurt, salt and black pepper.
  7. Stir well and let the sauce gently thicken.
  8. Return the chicken to the pan and let it simmer briefly so it absorbs the sauce flavor.
  9. Turn off the heat.
  10. Add lemon zest (zest of 1 full lemon).
  11. Squeeze fresh lemon juice over the top.
  12. Garnish with fresh dill.
