Mix cream, mustard, hot sauce, tomato paste, paprika, garlic powder, onion powder, oregano, salt, black pepper, and ground coriander in a large bowl.
Whisk until all ingredients are well combined.
Wash the chicken pieces thoroughly and place them in the marinade.
Coat the chicken evenly with the marinade.
Let it marinate for at least 1 hour for enhanced flavor.
Arrange the marinated chicken on a wire rack. If unavailable, use the oven rack over a tray to catch drippings.
Preheat the oven to 190°C.
Bake the chicken for 1 hour and 30 minutes until fully cooked and golden.
Remove the chicken from the oven. Place two burning charcoal pieces in a small container.
Drizzle a few drops of oil onto the hot charcoal.
Place the foil container in the center of the tray, cover tightly, and let the chicken absorb the smoky flavor for 30 minutes in the closed oven (turned off).
