Ingredients

For the Tuna Salad

For the Pesto Sauce

Instructions

  1. Drain the canned tuna well.
  2. In a blender, combine the drained tuna, mayonnaise, chopped parsley, finely chopped onion, chopped pickled cucumber (or jalapeño), lemon juice, salt, and black pepper.
  3. Mix well until the ingredients are combined, leaving some small chunks of tuna for texture.
  4. In a food processor or mortar, combine the fresh basil leaves, salt, nuts, garlic cloves, Parmesan cheese, and olive oil.
  5. Blend or pound until a smooth sauce forms. If it's too thick, add a little more olive oil until desired consistency is reached.
  6. Slice the avocado into even pieces. Slice the tomato.
  7. Sprinkle the avocado and tomato slices with salt and black pepper.
  8. Place your chosen bread in a toaster, grill pan, or oven.
  9. Toast until it's golden and crispy. This step is essential for the sandwich's texture.
  10. Take one slice of the toasted bread. Spread a generous layer of the pesto sauce on it.
  11. Add a layer of the prepared tuna salad on top of the pesto.
  12. Arrange the tomato slices over the tuna. Sprinkle with a touch of salt.
  13. Layer the avocado slices on top of the tomatoes.
  14. Close the sandwich with the second slice of toasted bread.
  15. Serve immediately. This sandwich is perfect for a quick and refreshing summer lunch!
