Tender Turkey Drumsticks with Honey Butter Glaze

This recipe for turkey drumsticks makes them tender and delicious, far from the usual dryness. The drumsticks are marinated in a mixture of softened butter, garlic, thyme, lemon juice, and mustard for a full day, then baked in the oven with continuous basting in the fats. Dry the turkey drumsticks and separate the skin from the meat using a knife.
Mix softened butter with salt, pepper, smoked paprika, fresh thyme, minced garlic, and lemon juice. Spread the mixture over the drumsticks on all sides, massaging it under the skin.
Leave the drumsticks uncovered in the refrigerator overnight.
Remove the drumsticks from the refrigerator half an hour before cooking. Preheat the oven to 180°C (350°F). Place a rack in a baking pan and add a little water or broth. Arrange the drumsticks on the rack.
Cook the drumsticks in the oven, basting with the fats every half hour, until the internal temperature reaches at least 75°C (167°F) (about 2 hours).
Mix melted butter with honey, mustard, smoked paprika, barbecue spice, and lemon juice to form the glaze.
Brush the hot drumsticks with the glaze and place them under the broiler for 10 minutes until golden.
Strain the remaining fats in the pan to use for gravy if desired.
