  1. Wash the potatoes well then dry, make slits with a knife so they can cook well. Place it in a preheated oven.
  2. In another pot, melt butter and oil. Add the flour and whisk until smooth and pale golden in color. While whisking, slowly pour in the milk gradually. Once fully incorporated and the bechamel thickens, add the cardamom and vanilla, and add sugar as desired.
  3. After about half an hour in the oven, or when made sure the potatoes are done, peel them, put them in a deep bowl, and mash them well. Add a spoonful of bechamel and stir.
  4. In a baking pan, put a layer of bechamel and add the potatoes on top of it. We can add nuts on top of the potatoes or on top of the last bechamel layer. Place in a preheated oven until golden.
