Spiced Basmati Rice with Nuts and Roasted Chicken

Heat a pot over medium heat and add sugar. Let it caramelize slightly until golden.

Pour in the water or broth and stir well. Add salt, black pepper, cinnamon, 7-spices blend, and bay leaves. Mix thoroughly.

Add the washed and drained basmati rice, stir lightly, cover, and cook on low heat until fully cooked and fluffy.

Preheat the oven to 180°C. Roast the pre-marinated whole chicken in the oven for about 1 hour, turning occasionally for even cooking. Alternatively, grill it over charcoal for extra flavor.

Heat ghee in a pan and toast the mixed nuts until golden and fragrant. Set aside.

Assemble the dish by placing the spiced rice on a serving platter, topping it with the roasted nuts, and arranging the roasted chicken around or on top of the rice.
