Instructions
In a pot cook quinoa.
In a frying pan add olive oil.
Add garlic, carrot and zucchini and stir.
Add salt, pepper and stir.
Remove the vegetables from the pan once cooked.
In the same pan add shrimps and sprinkle some pepper and cook till light color.
Dressing
In a small bowl add lemon juice, salt, pepper, mustard, maple syrup and chilli flakes and mix till combined.
In a big bowl add quinoa, vegetables and mix.
Add mango, parsley and shrimp then drizzle the dressing.
