  1. Chop a large quantity of tomatoes, red bell pepper, onion, and carrot. Keep garlic cloves whole or mince them.
  2. Add fresh thyme and a good amount of fresh, chopped basil.
  3. Toss all the vegetables with a generous drizzle of olive oil, salt, and black pepper. Optionally, add a handful of cashews for extra creaminess in the sauce.
  4. Mix all these beautiful ingredients well.
  5. Spread the seasoned vegetables on a baking tray. Roast them in a preheated oven at approximately 200°C for about 40 minutes, or until they are soft and slightly caramelized.
  6. While the vegetables are roasting, boil your pasta according to package instructions until al dente.
  7. Reserve about half a cup of the pasta cooking water before draining.
  8. Once the vegetables are roasted, transfer the entire mixture into a blender.
  9. Add some of the reserved pasta cooking water to the blender. Blend until a smooth, creamy sauce is formed.
  10. Pour the blended sauce into a saucepan. Add some whipping cream, salt, black pepper, paprika, and additional thyme to taste.
  11. Bring the sauce to a gentle simmer for a few minutes, allowing the flavors to meld.
  12. Add the cooked pasta directly into the saucepan with the sauce. Toss everything together until the pasta is well coated. Serve immediately.
