Roasted Tomato & Fresh Mozzarella Bruschetta Sandwich

Preheat the oven to 180°C.
Cut the cherry tomatoes in half and place them on a baking tray. Add the garlic cloves, drizzle with olive oil, and season with salt, pepper, and dried thyme.
Roast the tomatoes in the oven for about 15-20 minutes until they are soft and caramelized.
While the tomatoes are roasting, toast the sourdough bread (or any bread of your choice) until crispy.
Spread chopped olives on the toasted bread.
Place a slice of fresh mozzarella on top of the bread, then add the roasted tomatoes and garlic.
Drizzle with balsamic glaze (optional) and garnish with fresh basil or thyme.
