Prepare the chicken by splitting it in half and removing the backbone.
In a bowl, combine olive oil, vinegar, lemon juice, tomato sauce, honey mustard, paprika, oregano, black pepper, ground coriander, ginger powder, garlic powder, onion powder, and salt to create the marinade.
Mix the ingredients thoroughly to ensure a consistent marinade.
Rub the marinade generously over the chicken, ensuring every part is well-coated.
Place the chicken on baking paper in a baking tray, skin-side up.
Preheat the oven to 200°C and bake the chicken for 30 minutes.
Reduce the oven temperature to 180°C and continue baking for 1 hour. Avoid opening the oven during cooking.
The chicken will cook to a golden color, with a tender and juicy texture.
