Restaurants’ Basmati Rice

Heat oil and ghee in a large pot over medium heat.
Add the whole spices (cinnamon, bay leaves, cardamom, cloves, and dried lime if using) and sauté for a minute until fragrant.
Add the chopped onion and sauté until it turns golden brown.
Add the grated carrot, grated tomato, curry powder, and turmeric. Stir everything together and cook for 2-3 minutes.
Add the rinsed rice, salt, and boiling water or broth and water. Stir and bring to a boil.
Once the water starts boiling, reduce the heat to the lowest setting, cover the pot, and simmer for 20 minutes without opening the lid.
If using food coloring, add it on top of the rice without stirring. After the 10 minutes, fluff the rice with a fork. The food coloring will remain on top, creating a beautiful layered effect.
Serve with chicken, grilled meats, or any dish of your choice.
