Cut potatoes into thin slices.

In a pot, add butter, flour, and milk to make bechamel sauce.

Then add thyme, salt, pepper, nutmeg, and cooking cream, once the sauce starts to thicken, add any kind of cheese.

In an oven pan brushed with oil, arrange the potatoes (watch video for technique).

Add salt, pepper, oil, thyme, a half-bechamel portion, and cheese.

Add another layer of potatoes, salt, pepper, oil, and thyme, then add all the bechamel and cover it with foil.

Bake it in a preheated oven at 180°C for 40 minutes, then remove the foil and bake it again under the grill for another 10 minutes till golden.
