Spread the fresh Palestinian za'atar on a tray.

Place a mesh over the za'atar and leave it in the balcony for 3 to 7 days, depending on the temperature, to dry.

Once dried, remove the leaves from the stems.

Place the dried za'atar between paper towels and pound it well, or use a food processor to grind it.

Add a bit of olive oil and mix thoroughly until the za'atar is coated.

Add sumac, toasted sesame seeds, and salt, and mix well.
