  1. Season chicken thighs with salt, pepper, 7 spices, lemon juice, and olive oil.
  2. Sauté sliced onions in olive oil until softened.
  3. Add sumac and sauté for 1-2 minutes.
  4. In a baking dish, layer bread, sautéed onions, seasoned chicken, and top with another layer of bread and onions.
  5. Bake in the oven for about 30 minutes.
  6. Garnish with toasted almonds, fresh thyme, and optionally pomegranate seeds and molasses.
