Instructions
First, cover oxtail with flour and pan sear on very high heat using ghee till golden brown.
Remove from pan, and in the same pan add onion and sauté, garlic, carrots and sauté then add tomato paste, sugar, meat spices, sauces, salt (if needed) and beef stock.
Let it boil then transfer to oven proof pan or tajine and let it cook on low heat for 3 hours.
