  1. Heat the oil in a pot over medium heat, add the onion, and stir for 2 minutes until it softens.
  2. Add brown sugar, Worcestershire sauce, or soy sauce.
  3. Continue stirring until the onion caramelizes.
  4. Add minced garlic and butter to the pot and stir until you smell the fragrant aroma of garlic.
  5. Sprinkle flour into the pot and stir well to create a thick soup base.
  6. Allow the flour to absorb into the mixture.
  7. Add in grape or apple vinegar, thyme sticks, bay leaves, and pepper, close the pot, and simmer on low heat for 20 minutes.
  8. Transfer the soup to small baking cups, add chunks of bread and any type of cheese you prefer.
