One Pot Rice with Chicken & Veggies

Marinate the chicken with salt, pepper, paprika, nutmeg & olive oil.

In a pan, heat some olive oil then add the chicken and stir until colored then set aside.

In the same pan, add butter then the veggies ( chopped bell pepper & onion, sliced mushroom, shredded carrot.

Add sweetcorn and season with salt, pepper, paprika & nutmeg.

Add rice and stir. Add butter and water.

Cover the pan and cook on low heat. After 10 minutes, add the chicken.

When cooked, add lemon zest and enjoy.
