One Pot Lemon Chicken

  1. Marinate the chicken with light yogurt, minced garlic, lemon, lemon pepper mixed spices and salt. In a large greased and heated pan, sear the chicken.
  2. Once it has a golden color (do not cook it through) remove the chicken in a plate.
  3. Add in the onions and a dash of water to remove anything sticking to the pan.
  4. Add the peas and carrots and give it a mix and let it cook for 5 mins.
  5. Add the rice, lemon juice and water and bring it to a boil.
  6. Put back the chicken on top and any juices in the plate and cover with a lid and put it on low heat for 20 mins.
  7. Remove the chicken and fluff the rice with a fork.
  8. Return the chicken, garnish with parsley and enjoy!
