In a pan, melt butter and add sliced mushrooms and cook until they release their juices.
In a separate large pan, add butter, chopped onion, Arborio rice, fresh thyme, and garlic, cook until softened.
Gradually add hot stock, one ladle at a time, stirring constantly until absorbed.
Continue adding stock and stirring then add mushroom and stir again until the rice is creamy and al dente.
Stir in remaining butter, Parmesan cheese, few stock and chopped parsley.
Serve hot, garnished with additional Parmesan and parsley if desired.
