Description

  1. In a bowl, add all-purpose flour, baking flour, salt, and baking soda. Whisk together and set aside.
  2. In another bowl, add white sugar, brown sugar (can substitute both with 1 cup white sugar and 2 tablespoons molasses), vanilla, instant coffee, and butter. Blend with a hand blender for better consistency.
  3. Add the egg and the egg yolk, and blend again to combine.
  4. Add flour mixture gradually while blending.
  5. Add the chocolate chips and fold in well.
  6. Let it rest in the refrigerator for an hour.
  7. Line a baking tray with parchment paper, and place cookie dough balls with some space between them.
  8. Bake in a preheated oven at 180 degrees for 10 to 15 minutes.
  9. Make some more balls smaller in size and bake for 7 to 10 minutes.
