Konafa Pistachio Chocolate Mousse

Instructions
- Whisk the egg yolks with sugar for 2 minutes until very light in color & doubled in volume.
- In a sauce pan heat almost half whipping cream with salt & vanilla. Do not boil!!
- Gradually whisk in the hot cream into the egg & sugar mixture until fully incorporated.
- Bring the custard mixture onto the stove on medium heat & whisk until it heats up & thickens.
- Remove from heat & add the chocolate & whisk until fully incorporated & smooth.
- Transfer the chocolate mixture to a plate/bowl, cover & refrigerate for an hour to cool down.
- Whip the remaining whipping cream until stiff peaks. Fold the whipped cream into the chocolate mixture until light & fluffy.
- Transfer into a serving bowl & spread evenly. Refrigerate for 2 hours.
- In a hot skillet on medium heat add butter & shredded konafa & toast until golden.
- Add pistachio cream & chopped pistachio to konafa & mix really well.
- Add konafa to the mousse layer.
- For the ganache heat the cream for 30 seconds in the microwave until hot then pour onto the chocolate.
- Let it sit for 5 minutes then start whisking until super smooth.
- Pour over the konafa layer & garnish with chopped pistachio & let it set for 15-20minutes & ENJOY💚
