Konafa Pistachio Chocolate Mousse

Instructions

  1. Whisk the egg yolks with sugar for 2 minutes until very light in color & doubled in volume.
  2. In a sauce pan heat almost half whipping cream with salt & vanilla. Do not boil!!
  3. Gradually whisk in the hot cream into the egg & sugar mixture until fully incorporated.
  4. Bring the custard mixture onto the stove on medium heat & whisk until it heats up & thickens.
  5. Remove from heat & add the chocolate & whisk until fully incorporated & smooth.
  6. Transfer the chocolate mixture to a plate/bowl, cover & refrigerate for an hour to cool down.
  7. Whip the remaining whipping cream until stiff peaks. Fold the whipped cream into the chocolate mixture until light & fluffy.
  8. Transfer into a serving bowl & spread evenly. Refrigerate for 2 hours.
  9. In a hot skillet on medium heat add butter & shredded konafa & toast until golden.
  10. Add pistachio cream & chopped pistachio to konafa & mix really well.
  11. Add konafa to the mousse layer.
  12. For the ganache heat the cream for 30 seconds in the microwave until hot then pour onto the chocolate.
  13. Let it sit for 5 minutes then start whisking until super smooth.
  14. Pour over the konafa layer & garnish with chopped pistachio & let it set for 15-20minutes & ENJOY💚
