Start by slicing the cucumber, cherry tomatoes, and onions. Chop the walnuts and crumble the cheese.
In a small bowl, combine the Dijon mustard, honey, olive oil, lemon juice, apple cider vinegar, and salt. Whisk together until smooth.
In a large bowl, add the cucumber, cherry tomatoes, onions, olives, hummus, walnuts, and cheese. Toss together gently.
Pour the dressing over the salad and toss again until everything is well coated.
Garnish with fresh mint leaves and serve immediately.
